Tuna Tofu Patties
- 1 block firm Tofu
- 2 cans tuna, drained
- 4 eggs
- 1 small carrot, grated
- 2 stalks green onion, chopped
- 3/4 tsp. salt
- 2 tsp. pepper
- 3 tsp. soy sauce
Squeeze water from tofu with cloth, or let sit on pile of paper towels, then crumble into a mixing bowl. Add remaining ingredients and mix thoroughly.
Drop by spoonfuls onto a greased frying pan. Turn when golden brown on both sides.
