Miso Pork Pot Roast

Pork Roast Ingredients

  • 4 lbs. pork butt
  • Head of fresh Garlic, grated (not minced or chopped)
  • 1½ cups water
  • 1/2 cup flour
  • 1/2 cup sherry wine
  • 2 tbsp. oil

Sauce ingredients

  • 2/3 cups shoyu
  • 1/2 cup miso
  • 1¼ cup sugar
  • 1 cup water
  • 1 tsp. ginger, grated

Rub grated garlic all over pork butt then cover with flour. Heat the oil in a large pot and brown pork evenly. Add water and sherry to pot and cook on medium heat for 1½ to 2 hours. Drain all liquid from pot and discard.

Combine sauce ingredients and mix well, then add to pot and cook on medium heat for 1 hour. Serve with rice and enjoy!
