Aunty Sister Corea’s Haupia

  • 4 cups mochiko flour
  • 2 cups white sugar
  • 1 can evaporated milk
  • 1 cup butter or margarine, melted
  • 4 eggs
  • 1 can coconut milk

Preheat oven to 375ºF. Mix mochiko flour & sugar, then add evaporated milk, eggs, coconut milk and butter, and mix until smooth. Pour batter into greased and floured 9″x13″ pan. Bake for 1 hour, then cool in refrigerator, serve and enjoy!

This is my late Aunty Sister Corea’s recipe. Aunty sister ran Hawaiian food catering business her entire life, and was also a prominent proponent of Hawaii’s democratic party.
