Place choice of pie filling (typically apple, cherry or peach) into baking pan (normal size pie pan works). Depending on the fruit chosen, sprinkle very lightly with Cinnamon.
Place pan in the oven and preheat to 425ºF; this allows spices and filling to warm slowly while making the dumpling (don’t let it get past a slight bubbling).
• 2 cups all-purpose flour
• 1/2-cup brown sugar
• 1/2-cup granulated sugar
• 2 tsp baking powder
• 1 tsp salt
• 3/4-cups unsalted butter (small cube)
• 1/2-cup boiling water
Combine dry ingredients of flour, sugars, baking powder and salt, then blend in butter with fingers (do not use an electric mixer), mixing until coarse. Stir in water until barely combined. Mixture should be combined together well, yet still appear grainy and “rough” textured. Drop spoonfuls over warmed filling mixture. Top lightly and evenly with an even mixture of granulated sugar and cinnamon. This adds the sweet ‘n delicious crunch to the dumpling topping. Bake at 350ºF until topping is golden brown, about 30 minutes. Enjoy.
